Ippudo Raffles City

No traveling still so i'm making pretend with a bowl of IPPUDO ramen at their eighth dining outlet at Raffles City Shopping Centre which is just a couple of days old. The 80-seater serves not just their signature ramen, but is also the first sake bar concept with some dishes exclusive to it. 
Outfitted with an in-house sake cellar, diners can enjoy highlights such as Japanese-style Shochu Sour and around 20 types of sake. We had the refreshing sparkling sake CHIYOMUSUBI SORAH which helped to cut through the fat savory ramen. I'd also recommend the DASSAI Junmai Daiginjo 45 which is available by the glass!
The exclusive dishes range from salted egg and cheese fries ($6.80), to healthy pumpkin salad ($5.80), wings and also a Teppan Rice. 
The Teppan Rice is served with a medley of red and yellow peppers, corn, and crisp-fried IPPUDO ramen noodles. A homemade cheese lava sauce poured on to the sizzling hot plate to give the dish extra savoriness. You could add on grilled wagyu beef ($13.80) and pork ($12.80). I probably wouldn't come to Ippudo to eat this as a main but it's quite an interesting side to share. 
I'd recommend the Spicy Chicken Wings ($8.80) to go with the ramen though. These deep-fried babies are coated with a homemade sweet and spicy sauce which has notes of umami. 
The buns- Salmon Katsu ($4.50) and Veggie Bun ($4.50) are better as bar snacks rather than sides for the noodles. The warm pillowy buns were perfect for sandwiching the crispy patty of your choice. I actually enjoyed the potato croquette a lot with its creamy mashed center. Dress the buns to your liking with the various sauces- Ippudo's original homemade savory sauce (like a bbq katsu), spicy chili and Japanese mayonnaise. 
The ramen needs no introduction. My preferred is the Akamaru, a deep roasty and fragrant garlic ramen. Jr's choice is the Shiomaru, a lighter salt flavored tonkotsu. The noodles tend to be on the soft side so i'd recommend going a level up so that your noodles maintain some chewiness, unless you're really into soggy noodles that is. 
From now till 13 September 2020, IPPUDO will be launching a special lunch set at only S$15.90, which includes one ramen offering, one side and one drink. The ramen choices include IPPUDO’s signature Akamaru and Shiromaru, Veggie Dashi and Chicken Shoyu. Pair them with sides such as IPPUDO gyoza, chicken karaage, IPPUDO Pork Bun, chicken bun, teppan takoyaki or mini green salad. The promotion is only valid at Raffles City outlet on weekdays from 11am to 5pm.

IPPUDO Mohamed Sultan outlet will also be celebrating its 10th anniversary this August, and to commemorate the special occasion, the restaurant will be bringing back the exclusive Tao Kuro Ramen, which was served in the outlet (known as IPPUDO x Tao) 10 years ago. The ramen features thick chewy noodles in shoyu pork-bone broth, pork belly, black fungus and a special miso paste. If you like your noodles uber savory, this is the one for you.
