Burger & Lobster Brunch, Raffles Hotel Singapore

Weekend brunch starts on Fridays at Burger & Lobster Raffles Hotel because this is the new normal. Served from 11am to 3pm on Fridays, Saturdays and Sundays, this indulgent brunch is only available at the Raffles Hotel outlet and you could enjoy it with their expanded cocktail menu.
Something unique to Singapore is the grilled Mala Corn ($6) tossed in a fragrant spicy rub that is more savory than spicy. I would also love this on their fries! Can someone bottle me the seasoning please! 
Another appetizer is the nutty and crunchy Fried Cauliflower ($6) served with a lime cilantro mayonnaise, which could do with a tad more acidity. Needless to say, you know which is my preferred bite to start. 
There are only 2 options for the mains, and it's a no brainer to order both to share because the Bloody Mary Roll ($24) is a lighter option that will balance out the rich B&L Lobster Benedict ($26). If you're for big flavors, the benny will knock you out. This eggs benedict features a toasted muffin slathered with a lobster bisque, then layered with smash avocado and bacon, topped with chunky Nova Scotian lobster meat that has been tossed in lobster bisque mayonnaise, and on goes a 64-degree sous-vide egg and drizzled with a rich lobster bisque hollandaise. If this is not chock full of lobster i don't know what is. 
The Bloody Mary Roll was developed because of the Bloody Mary on the cocktail menu. Chilled Nova Scotian lobster is tossed with a tomato mayo spiced with Tabasco sauce, celery salt, and charred cherry tomatoes. It's not spicy at all in my opinion and was a refreshing complement to the eggs ben.
The freshly made Belgian Waffles Ice Cream and Raspberries ($18) was the perfect ending to the meal. I especially loved the fragrant and refreshing raspberry swirl ice cream which was sweet and tangy! The sugar coated waffles satisfied my butter craving and wasn't too heavy to end with. 
What's brunch without some drinks? Burger & Lobster's new beverage menu is created in collaboration with the award-winning Old Young’s Distillery from Perth, and Alain Milliat from Lyon, France. Give their LGB-Tini ($20) a try- the Reyka Vodka martini is inspired by the restaurant’s famous lemon garlic butter!
